
A hot bowl that is guaranteed hearty and rich in ginger, garlic, onion, sweet potato and of course peanut butter! I went on a hunt to find a recipe that didn’t require a ton of ingredients and was kind to my wallet.
I’ll admit tho, there is a lot of prep work to make this hearty dish, but it is well worth the time you’ll save in leftovers. To give you an idea, I made this soup exactly as instructed (with six servings) on a Sunday, and it lasted till Friday! I ate a bowl at least once a day, sometimes twice, and still had plenty throughout the work week.
The key to making this stew last longer is by adding different food groups to the mix. When you make yourself a bowl, not messing with the original recipe, you can extend its lifespan by adding carbohydrates to your bowl. So far, I have added plain rice noodles and separately brown rice. I also think the addition of beans would make this recipe go a long way.
I have made this recipe twice this winter and foresee it my immediate future. Definitely give it a try!
